Scrambled Tofu

Scrambled Tofu with Porcini Mushroomsdairy freeno added sugarEgg Freegluten free

You will need

Silken Tofu
1 Onion
olive oil/ sunflower oil
2 garlic cloves
Mushrooms
cumin for the colour
salt and pepper to season

 Preheat a large, heavy bottomed pan over medium high heat. Sauté the garlic and mushrooms in olive oil for about a minute. Break the tofu apart into bite sized pieces and saute for about 10 minutes
Ad the cumin then season cook for about 5 more minutes. Serve warm.

You can add any vegetables you like and it turns into more of and omelette

Juice of the day


Today I had..........

Kale
Spinage
Apple
Carrot


Kale is an amazing detox Vegetable and  is packed with Vitamin A With over 192% of the RDA of vitamin A, one cup of kale is an effective antioxidant, boosts immunity, maintains healthy bones and teeth.
Zayn’s Chocolaty Vegan Truffles



 

You will need……

500g Cashew nuts

400g dates

4 strawberries

3 tablespoons of unsweetened cocoa 

Vanilla pods/ essence

Apple juice


1.Blend the nuts in the blender, add dates and some apple juice to help it along,


2. when you have a paste that is sticky and thick add strawberries, vanilla and cocoa.


3. when the mix is thick and easy to roll, dust a board with cocoa and start hand  rolling your truffles.


4. put in the fridge for 20 mins or more to firm.



Try adding coconut too or cherries or even orange zest and juice for alternatives.
